Joy of Cooking recipe for Jerusalem Artichokes

BURDOCK ROOT CAN BE SUBSTITUTED FOR JERUSALEM ARTICHOKE

Preparation
Wash: 1 ½ lb Jerusalem artichokes/Burdock roots
Steam or drop them into boiling water
Add 1 tsp mild vinegar or white wine to prevent discoloration
Cook covered until tender only.
(If permitted to cook beyond this point, they will again become tough.)
Test with fork after 15 minutes. Drain.
Rub off the peel.
Sauce
Melt 2-3 tbsp butter
Add: 2 drops hot pepper sauce
2 tbsp chopped parsley
Pour these ingredients over the artichokes/burdock roots or cream them (p. 280). Or cut into halves and pressure cook 10 minutes at 15 lbs.
